Image Salads aren’t only for people who are on a diet. As long as your ingredients are fresh and clean and you aren’t afraid to experiment, a salad is an easy nutritious meal to prepare in the motorhome.

If you are making a salad part of your main meal, then why not try adding some fruit and/or nuts to it. Take a good green salad (I usually include celery) and add some pink grapefruit segments; this enhances the flavour adding just a little tang to the salad and is great served with pork tenderloin or chops cooked on the barbecue for example. I often add apple, pumpkin seeds, or pine nuts to my salads, just to give them a little extra taste and crunch. Boiled egg slices also make it more of a meal than a snack.

Nowadays you can buy ready-prepared salads in supermarkets – they are a little more expensive but, hey, you are on holiday so hang the expense on occasions. You can even buy a complete Caesar salad nowadays so that you don’t have to worry about grating the Parmesan cheese and buying the appropriate dressing.

If you decide on a Caesar salad, then why not top it with lightly cooked slithers of chicken breast to make it a complete meal. You can buy the chicken as mini fillets in the supermarket or you can slice larger fillets yourself, and it only takes a couple of minutes to cook in the skillet or on the BBQ. Serve this dish with a jacket potato or some potato wedges if you’re really hungry.
