Plum Clafoutis

PLUM CLAFOUTIS - 40 minutes ~ Serves 4
 
15g butter for greasing
500g British Victoria plums, halved,
stoned and sliced thickly
75g plain flour
50g caster sugar
200ml carton creamy coconut milk
50ml semi-skimmed milk
3 large eggs
1 tsp natural extract of vanilla
1 tbsp desiccated coconut

Preheat the oven to 180°C. Grease a shallow oven proof dish (1.5 litre capacity). Arrange the
plums in the dish, spreading them in an even layer. Place in the oven for 5 minutes so the dish
will be hot when you come to pour in the batter.
Sift the flour into a bowl and add the sugar. Mix the coconut milk, milk, eggs and vanilla. Whisk
into the flour mixture to make a smooth batter.
Pour batter over the fruit. Bake for 20 to 25 minutes until set and golden.
Scatter the desiccated coconut over the top.
Serve immediately.
