FABULOUS STEAK PIE - 60 minutes ~ Serves 4
2 potatoes – boiled and sliced
900g of best diced chuck steak
a little seasoned flour;
1 large onion, chopped;
Juices saved from roasting a joint
of beef and skimmed of fat, made
up to 300ml with beef stock, or just
use beef stock;
225g self- raising flour;
1 tsp salt
50g beef dripping, diced
50g margarine, diced
6-8 tsp cold water;
1 egg, beaten
Roll the meat in the seasoned flour. Place in a pan with the chopped onion, meat juices and/or stock. Simmer for 2 hours.
Meanwhile make the pastry. Mix together the flour and salt in a basin.
Rub in the beef dripping and margarine. Mix with cold water - to form a stiff paste. Turn the dough on to a floured board and roll out.
Fill a pie dish with the meat and gravy. Cover with the sliced potatoes, then the pastry.
Brush with beaten egg, and bake at 180°C for 30 minutes.
